There are many places where bacterial contamination can enter a meat product process. One needs to be vigilant right from the slaughter process all the way through until the final packaged product. With this in mind, we recently completed a trial on deboned carcass meat. The results were beyond our expectations.

The product we used is called Mtech. The trial samples showed results of less than 100 bacteria per gram after 49 days, and after 63 days were still far below the internationally recognised limit. In comparison, the control (that represents how the product would normally be treated) showed millions of bacteria per g after 42 days. In fact, after the 42 day samples, no other controls were tested due to them being too contaminated.
